“Energy balls” Coconut, Lime & Date protein snack!

I love to make “energy balls” all year round because they are easy snacks packed with protein and deliciousness. This particular recipe is great for the end of pregnancy! Packed with dates, cashews, lime and coconut, this recipe can aid in a smooth delivery.
There is considerable evidence that eating dates in the third trimester can help labor start naturally and help pregnant women avoid inductions. The article below is an example of the research studies which examine eating dates for significant reduction of medical induction and intervention in beginning the birthing process- which is kind of amazing! So eat up mamas, and anyone else wanting a yummy treat!

Lime Coconut Energy Bites

Ingredients:

1 cup of Raw Cashews

1 cup packed, pitted Dates

2/3 cups unsweetened fine coconut

2 tbsp fresh lime juice

1 tsp fresh grated lime zest

Instructions:

Step 1. Place the cashews in a food processor and mix until mostly broken down.

Step 2. Add the dates and process until a dough forms.

Step 3. Add the coconut and lime and process until well mixed.

When I make it at home I don’t mix the coconut in the ball, I roll the date balls in a finely shredded coconut to give it a nicer look and texture.

Step 4. Roll into balls and store in the fridge.

Makes 15 balls.
